Carrot Cake

With Easter coming up soon, I have a wonderful & deeeeeeeelicious recipe for you to try! It is not healthy by any means. So share it with as many people as possible

Ingredients for cake:

  • 2 ¼ cups of all-purpose flour
  • 2 tsp baking powder
  • 1 ½ tsp cinnamon
  • ¼ tsp salt
  • 2 cups grated carrots
  • 1 cup sugar
  • ½ cup brown sugar (packed)
  • 6 tbsp softened butter
  • 3 eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk

Ingredients for frosting:

  • 6 oz softened cream cheese
  • 2 tbsp softened butter
  • ½ tsp vanilla extract
  • 1/8 tsp salt
  • 3 cups powdered sugar
  • ¼ cup chopped pecans (to sprinkle on top)

Steps:

1. Preheat oven to 350 degrees

2. In a medium bowl, whisk together the first 5 ingredients.

3. In a separate large bowl, use a mixer to mix together the sugar, brown sugar, softened butter, eggs, vanilla extra, and buttermilk.

4. Then add in the dry ingredients from the medium bowl to the large bowl. Mix together.

5. Spread cake batter into a greased 13×9 inch pan.

6. Bake for 28 minutes. Then cool completely.

7. Now mix up the frosting by adding all the ingredients in a medium bowl. Beat until fluffy. Then spread over the cooled cake.

8. Lastly, sprinkle the chopped pecans over the cake. Serve!
