Honey Peppercorn Vinaigrette

This easy Honey Peppercorn Vinaigrette is clean-eating, Paleo-friendly and awesome on a Cobb Salad!

When we visit my parents, one of our favorite places to eat out with them makes a killer Cobb Salad with a Peppercorn Vinaigrette. Confession about moving like we do: Many of the things we miss most is the food from our favorite places. Luckily, I think my knock-off dressing came out pretty darn close!

It’s so delicious on a big old Cobb Salad.

We often grill up a bunch of marinated chicken breasts and hard-boiled eggs on the weekends to make easy Paleo meals during the week. This is one of those meals that whips up in no time thanks to planning ahead a little!

On our Cobb salad we usually do the grilled chicken, hard-boiled egg, avocado, bacon, and sometimes a little cheddar. Neither one of us are big on raw tomatoes so we sub diced sweet peppers instead.

It’s an easy, filling, and delicious weekday meal!

Dressing Ingredients:

  • 1/3 cup Apple Cider Vinegar
  • 1/2 cup light olive oil or avocado oil
  • 1 tbsp honey
  • 1 clove garlic, minced
  • 1 tbsp red onion, finely minced
  • Salt, to taste
  • Freshly Ground Peppercorns, to taste

Mix all ingredients in a shaker bottle until well-combined. Re-shake as needed.

Since the meal was so Paleo-friendly, I decided I deserved a glass of wine and Pellgrino to go with it.

The little dressing carafe I picked up at Target the other day just for this post. It’s glass, inexpensive and really pretty! Normally, we serve our dressing right out of the blender cup with the metal shaker ball, so this makes me feel like a real adult to have a special dressing server.

Ingredients
  • Dressing Ingredients:
  • ⅓ cup Apple Cider Vinegar

Instructions
  1. Mix all ingredients in a shaker bottle until well-combined.
