Pineapple Bars with Coconut Drizzle

Oh, my, these sensational dessert bars are heavenly! In fact, they should be called Pina Colada Bars because they taste so rich and decadent. Pineapple Bars with Coconut Drizzle are ooey, gooey and so mouthwatering they just seem to slide down your throat! If you suffer from pineapple cravings, this dessert will certainly satisfy that and any other sweet tooth craving you may have! These jewels have a crust layer, then a pineapple layer with a streusel topping on top. After baking the bars, the Coconut Drizzle is added on top. These bars are sweet comfort food at its best!

Not only that but they’re not too difficult to make or very expensive. I carry coconut extract in my pantry, but that is the only ingredient that is out of the ordinary. Everything else you may have on hand except for crushed pineapple–although I usually have this on hand, too. I was trying to use up some crushed pineapple that I had in the refrigerator after making Polynesian Chicken a few weeks ago, so this recipe was great for that. As it happened, I didn’t have quite enough pineapple for this recipe, but I had a cut up pineapple in the refrigerator so I added a little of that diced finely to give the full amount needed.

I saw these lovely bars on Pinterest a few weeks ago, and knew that because of my husband’s love for pineapple they would be a big hit for him. The texture in these Pineapple Bars was amazing. And the Coconut Drizzle was spectacular! There’s no actual coconut in the recipe–only imitation coconut flavoring in the icing. I will have to make up another batch of these bars soon because John took a couple of containers of these goodies and gave them away to friends so he has yet to sample them.

If you’re looking for a fabulous, though gooey, dessert for company, special occasions, or because your family members love pineapple, then this recipe should wow them completely. I can’t begin to tell you how wonderful these bars tasted. They were yum, yum delicious!

Pineapple Bars with Coconut Drizzle is like eating Pina Colada Bars!

These luscious Pineapple Bars with Coconut Drizzle will certainly cause you to drool!

These dessert bars are so sensational! Your family will love them especially if you enjoy the flavors of pineapple and coconut.

Here’s what I did.

For the crust layer you need UNBLEACHED flour, sugar, salt and cold butter.

Mix flour, sugar and salt. Cut in butter with a pastry blender until coarse crumbs form.

Reserve one cup of crumbs for the streusel topping.

Press remaining crumbs into a greased 9×13″ glass baking dish. Bake at 350 for 15 minutes. Remove from oven.

I used UNBLEACHED all-purpose flour, sugar, salt, sour cream, eggs and crushed pineapple for the next layer.

Place UNBLEACHED all-purpose flour in a bowl. Bleached four toughens baked goods. Add sugar, salt, eggs and sour cream.

Whisk ingredients to combine.

Add drained crushed pineapple and stir gently to combine.

Remove crust layer from oven after 15 minutes.

Pour pineapple filling over top of the crust layer.

Sprinkle with remaining one cup crumbs.

Bake at 350 about 30-35 minutes or until set. (The original recipe said to bake this for about an hour but mine only took about 35 minutes). Allow bars to cool completely before adding drizzle.

Powdered sugar, whipping cream and coconut extract are the ingredients needed for the coconut drizzle.

Whisk ingredients to combine.

Drizzle icing over top of cooled pineapple bars with a fork. Allow icing to set an additional 15 minutes before cutting into bars.

Pineapple Bars with Coconut Drizzle are ooey, gooey and delicious!

Ingredients
  • CRUST:
  • 1 ½ cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 1 ½ sticks cold butter
  • ⅛ tsp. salt
  • ½ cup sugar
  • FILLING:
  • 2 eggs
  • ⅓ cup UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 1 cup sugar
  • ½ cup sour cream
  • ⅛ tsp. salt
  • 16-oz. can drained, crushed pineapple
  • COCONUT DRIZZLE:
  • 1 cup powdered sugar
  • 5 tbsp. heavy whipping cream or half-and-half
  • 1 tsp. coconut extract

Instructions
  1. CRUST:
  2. Stir flour, salt and sugar together.
  3. Add butter and cut in with a pastry blender until well blended.
  4. Reserve 1 cup crumbs.
  5. Pour remaining crumbs into a greased 9x13” baking dish and press down firmly.
  6. Bake at 350° for 15 minutes.
  7. Top with filling and bake an additional 30-35 minutes or until filling ingredients are set.
  8. Cool 15 minutes before adding coconut drizzle.
  9. FILLING:
  10. Whisk eggs, flour, sugar, sour cream and salt together.
  11. Gently fold in pineapple.
  12. Pour pineapple mixture over top of baked crust layer.
  13. Sprinkle filling layer with remaining cup of crumbs.
  14. Bake at 350° for 30-35 minutes or until set.
  15. Cool 15 minutes before adding coconut drizzle.
  16. COCONUT DRIZZLE:
  17. Combine ingredients with whisk.
  18. After bars have cooled 15 minutes, drizzle icing over top of Pineapple Bars with a fork.

Notes The original recipe said to bake the pineapple layer for an hour. My oven had this ready in 35 minutes. Check your oven and cook recipe until set.
