Ooey-Gooey Brownie Batter for One

Remember the single-serving recipe for brownie batter that I mentioned the other day? Well, here it is! And, trust me, it’s a good one. I make it ALL the time now.

I love enjoying this Ooey-Gooey Brownie Batter after dinner as a way to satisfy my sweet tooth without going overboard on calories and sugar. It’s also perfect as a pre- or post-workout snack since it incorporates a good mix of protein, carbs, and fat, which are essential for providing your muscles with the fuel that they need.

Have you ever looked at the protein content of almond milk or rice milk? I love these things about Silk Soymilk, but, really, I just love its smooth delicious taste. It’s my go-to milk choice in my iced coffee or when I order an iced latte. It adds so much flavor and creaminess ( protein!) to my coffee without a lot of sugar.

So, that’s why I love Silk Soymilk so much, but now it’s time to tell you about this decadent brownie recipe. First things first: The recipe only requires 3 ingredients: Silk Original Soymilk, unsweetened cocoa powder, and coconut butter. I used Nikki’s Vanilla Cake Batter Coconut Butter in this recipe, and it will give you the best results, but you can also substitute Silk Very Vanilla Soymilk or Silk Chocolate Soymilk your choice of sweetener (i.e. sugar, honey) with regular coconut butter.

Ingredients:

  • 2 tbsp (heaping) Nikki’s Vanilla Cake Batter Coconut Butter
  • 1.5 tsp unsweetened cocoa powder
  • 2 tbsp Silk Original Soymilk

Directions:

Combine above ingredients in a small, microwave-safe bowl, such as a ramekin.

With a spoon, mix ingredients until they are well combined. Then, place the ramekin in the microwave and cook for 35-40 seconds.

Remove the ramekin from the microwave and, while still warm, stir the ingredients until they form a thick, rich, and gooey brownie batter.

Grab a spoon and enjoy!
