Coconut Oil White Chocolate Macadamia Nut Cookies

A half-batch version of a soft and chewy white chocolate cookie with macadamia nuts. These cookies are made with coconut oil and have an optional chocolate drizzle for the white chocolate lover!

And I present…the husband’s all-time favorite cookie — that’s right – a white chocolate macadamia nut cookie! He absolutely loves these and I’ve finally “perfected” the recipe he says.

Since we’ve been together I’ve been making batches of these cookies for him and slowly perfecting the recipe over time. And the final batch I made for him for Valentine’s Day won the award of the “best white chocolate-macadamia cookie ever.” His award of course, but I had to agree
