Rice Krispies Breakfast Parfait “Buffet”

Make breakfast fun and easy with a Rice Krispies® Breakfast Parfait “Buffet”!

There are two types of people in the world — breakfast people, and not breakfast people.

I am a breakfast person. I wake up starving. It doesn’t matter if it’s 3 am or 9 am, I wake up ready to eat IMMEDIATELY.

My kids are the exact opposite.

During the Summer months it’s not a huge deal. They sleep in and eat breakfast once they get around to it, which is usually when I’m thinking about lunch. But during the school year, it’s an issue. We are already weeks away from the Jon David starting the 5th grade and Lucy’s first year in half day PRESCHOOL. And breakfast is kind of important when you’re up early and heading off to learn all of the things.

I’ve been experimenting with different breakfast options over the Summer, looking for something quick, easy, FUN, and yummy that they BOTH enjoy. Unfortunately for them, I am not a short order cook and don’t have time to make two separate, nutritious breakfasts every morning.

And friends…we have found a winner. Let me introduce you to the Rice Krispies Parfait “Buffet”.

My kids are crazy about buffets. CRAZY. If I just mention the word buffet, they start wiggling in their seats. And as it turns out, when you set out some Rice Krispies®, some sliced fruit, and some bowls of yogurt and call it a “buffet”…

Well. Suddenly your kids are excited to make their own breakfast. And eat it.

Lucy and Jon David have never liked milk very much, but they love cereal. So this is a great alternative for them. I use Greek yogurt so they start off the day with lots of protein, then let them add whatever fruit I have on hand. For extra crunch we top it off with their favorite Rice Krispies cereal (personally, I like to add GENEROUS layers throughout) and you have a yummy, crunchy, creamy breakfast bowl that I can feel good about them eating. Even Lucy can make her own!

The best thing about this is that it’s open to any possibilities. We can use any fruit I have available and even stir in a bit of honey or peanut butter if we’re feeling sassy!
