Easy Vegan White Cake with Chocolate Coconut Frosting. A gluten free, paleo friendly vegan dessert cake that tastes just like classic white cake! Super simple to make with natural ingredients and a total crowd pleaser. Great for celebrations or anytime of year!

Calling all paleo and vegan folk! Oh and gluten free folk! Oh and grain free folk! This classic white cake is for YOU! And it’s been tried and test 3 times. No joke. So worth it though!

Let me back up here a minute. You see, I get a lot of request from clients, friends, family, and readers about desserts. Especially the basic or classic desserts, like plain old white cake. They come to me pleading for flavor and texture and all the things included in a heavenly sugar and flour and egg filled dessert, but without them of course.

I feel their pain. No really. Sadness. I feel for my friend’s kid who can’t have dairy or eggs or gluten due to celiac disease. I feel for my other friend’s kid who is trying to limit casein and gluten in their diet in order to help reduce the symptoms of their autism disease (April is national autism awareness month). And I feel for my husband’s athlete’s who trying combat stress and fatigue and is reducing grains in their diet in order to do so. You see, we are all unique in our dietary needs but at the same time, we all yearn to ENJOY life. Besides, stressed spelled backwards is desserts, so let’s stress less and make a classic white cake with coconut frosting that’s vegan and paleo friendly. CURES ALL, right?

I am a totally people pleaser when it comes to make allergy friendly recipes. Ya, I know and you know, we shouldn’t worry about pleasing everyone but it’s not that kind of affirmation I’m looking for in this white cake recipe. Nope, this dessert recipe is out of PURE joy and commitment to helping solve the world’s problems! Okay I may be exaggerating a tiny bit, but you get my point. I want to help find solutions for people with allergies or dietary restrictions. I want to make it EASY. And as mentioned above, I want EVERYONE to be able to have their cake and eat it too!

Today’s classic white cake recipe with chocolate coconut frosting really is easy and really is special. I tested it three times, did I mention that? Wait… I did (enter sarcasm). But I also shared it with three times…with multiple groups of people/kids (all different diets and feedback of course), and then made final adjustments so you wouldn’t have to worry. Oh and we basically ate cake for breakfast for a week straight. Along with the coconut frosting, which you can leave plain vanilla or add cocoa too. I don’t think that is a bad thing though, right?

In fact, I bet this cake is healthier than a lot of cereals out there.. but I’ll save that topic for another day. Let’s focus on the positive and the cake. Gah..

Like the fact that all you need are a few ingredients to make this classic white cake. Coconut flour, coconut oil, almond flour organic white vinegar, coconut sugar, vanilla, and salt. And for the coconut frosting, you just need coconut cream and cocoa powder.

Mmm k, enough jabber. Let’s get to the easy peasy recipe and feed the soul. I mean let’s make our cake and eat it too!

Ingredients

  • 1 cup coconut flour (sifted works better)
  • 1 1/2 cup almond meal/flour
  • 1/4 cup potato starch
  • 1 1/2 tsp baking soda
  • 1/2 to 2/3 cup coconut sugar (see notes for reducing sugar)
  • 1 1/2 tsp distilled white vinegar or apple cider vinegar (an acid to work with baking soda)
  • 1/4 tsp salt
  • 1/4 cup (around 4 tbsp) melted coconut oil
  • 1/4 cup agave nectar (or honey)
  • 1 cup water
  • 1 tsp vanilla extract
  • FOR THE COCONUT FROSTING
  • 1 can coconut cream
  • 2 -4 tbsp unsweetened cocoa powder
  • 1 tsp vanilla
  • 1/4 cup powdered sugar (do not add if you are wanting lower sugar or paleo version)

Instructions

  1. SPECIAL NOTE - > Before you bake the cake and if you are making coconut frosting with this, first place it in back of fridge for 24 hrs.
  2. preheat oven to 350. Grease a cake pan or 8x8 baking dish.
  3. Mix all your dry ingredients together in a bowl. Add this to your dish.
  4. In another bowl, mix your water, honey, oil, vinegar or acid.
  5. Pour this in your pan with the dry ingredients. Add your vanilla and mix everything together until you have a batter that's smooth.
  6. I did this in the baking dish like a wacky cake style of baking. Make sure there are no dry ingredients unmixed at the bottom.
  7. Bake for 40-45 minutes or until golden brown.
  8. Remove and let cool.
  9. FROSTING DIRECTIONS
  10. Make sure your coconut cream can (10oz) is chilled 24 hrs and you have coconut cream not milk.
  11. Once chilled pour the hardened cream mixture into a bowl.
  12. Add your remaining ingredients and then mix or beat until fluffy and smooth.
  13. Keep cool until ready to top on your cake.
  14. Super easy!

Notes

Be care when slicing the cakes. wait till it cools. you don't want it to crumble. You can use lemon juice instead of vinegar but it will have a slight lemon taste.

For the coconut cream, you might have some water leftover from the can, just disregard it and use whatever cream has hardened.

For reduced sugar, use 1/2 cup coconut sugar or xylitol.
