Easy Chicken Recipes:125 Best Chicken Recipes Cookbook

We have been on the biggest chicken kick lately can you hear me saying “Winner, winner chicken dinner!”? Then the reality sinks in how to get off the treadmill of the same old recipes. Well, luckily I tried two new recipe cookbooks the first called 125 Best Chicken Recipes.What’s great about this cookbook is the recipes are mostly 30 minute and under meals. Then there was the book 125 Best Casserole and One-Pot Meals packed full of all types of convenient cooking recipes.

The recipes cover skillet, saucepan oven and grill. What I loved about the recipe I tried is that is was really easy. It was written for two so I doubled it. I also omitted the sun-dried tomatoes as Sammie is not a huge fan of tomatoes in general. The recipe I tried was called Chicken Braised with Artichoke Hearts and Sun-Dried Tomatoes. Honestly this was really a delicious meal even without the sun-dried tomatoes. What’s really great about the book is it has tips to the left of the recipe, shopping tips and even a suggested menu. The menu even included a dessert.

After thumbing through the book I made the easy chicken recipe. The recipe had menu suggestions were for buttered noodles, crusty bread and green salad. Which of course can easily be changed if you didn’t want those side dishes.

I just grabbed a quick shot under normal evening lighting with my cell phone of the dish as I cooked it. I omitted the dried tomato s and added zucchini. I served the easy chicken dinner recipe with spaghetti noodles. It was a big hit with the family and I didn’t even have any left overs to take a pretty photo for you! Life happens, families eat and bloggers cry when they didn’t take the photo first. Don’t worry I’ll be making this recipe again and update the photo later.
