(SUNDAY) RECIPE | RICE WITH SALAMI



Not exactly Sunday anymore, but I still wanted to share it with you (we need to cook on Mondays as well, right?). This recipe is incredibly simple, but oh so delicious. We often make it when friends are coming over and we never heard anyone who didn’t like it that much! Worthy of giving it a try! (See ah.nl for the Dutch recipe).

What do you need?

  • 250 g yellow rice
  • 250 g mildly seasoned salami
  • 1 onion
  • 1 clove of garlic
  • 2 sweet pointed peppers
  • 50 g dried apricots
  • 2 spoons oregano
  • 300 g broad beans (I used peas here, but usually we take broad beans)
  • 3 spoons roasted pine nuts

How do you make it?

Prepare the rice according to the guidelines on the package. Remove the plastic from the salami, and cut it in slices of 0.5 cms and halve these. Cut the onion and the garlic. Halve the peppers in the length and remove the insides. Cut them in small halve rings.

Heat a pan and add the salami (don’t use oil or butter), do this for 3 minutes and meanwhile cut the apricots in small pieces. Add the onion, garlic, peppers and oregano to the salami cook it for another 3 minutes. Then add the beans and cook everything again for 3 minutes. Finally, add the rice and apricots to the mix and serve. Use the pine nuts as a topping. Yummm!
