An especially happy Monday…I’m OFF today! Hope everyone had a great weekend! It’s been a marvelous weekend, so here are some highlights. Thanks to Katie for hosting the link-up!

Marvelous is…signing up for a 5k Color Run in August. I’m super excited about it! I’ve been wanting to get back into running, so this is a rather unconventional and fun way to start up again. For those of you who haven’t heard of a Color Run, basically at certain points in the run, people are throwing colored powder at you, so you start off wearing white and end up completely tie-dyed by the end of the race.

Marvelous is…getting takeout (sushi again!) on Friday night, so I don’t have to cook!

Marvelous is…my Pineapple Upside Down Cake coming clean out of the pan! I’ve definitely had my share of disasters in the past, so this was pretty exciting that it came out out one piece!

Marvelous is…when food brings back childhood memories! When I was a child my mom and grandma used to make polenta quite often. It’s been years since I’ve had any…in fact, I had totally forgotten about it until I found this recipe for Strawberries and Cream Breakfast Polenta last week. I made it Saturday a.m. for breakfast (FYI…I substituted unsweetened coconut milk for the regular milk and topped it off with a little sprinkle of cinnamon), and it was fabulous!

Marvelous is…getting these awesome workout shirts from Kohl’s. They were waaaay on sale so of course, I had to get multiple colors! ;-)

Marvelous is…being introduced to these fab No-Bake Pecan Pie Bars! Crista made them and brought them over to our house on Saturday (thanks Crista!). They almost taste like the pecan pie Larabars, but waaaay better. I already pinned the recipe and will be making them in the near future. OMG…are they good!
