Baked Muffin Mix Donuts




I've seen so many cute donuts on Pinterest and Instagram lately that making allergy-friendly versions for my son to enjoy were becoming a priority. Okay, okay...maybe I wanted the donuts too. Can you blame me? They look sooooo cute!!! and yummy!!! :)
I found the donut pans at my local kitchen store for less than $10, perfect. I received allergy-friendly muffin mix from Enjoy Life Food's new line of boxed baking mixes in exchange for a blog post about the product. Lucky for me the mix didn't disappoint and it made making these donuts soooo much easier than trying to come up with my own mix. Phew!



I followed the directions on the back of the box to make the muffin mix by adding oil and water. So easy. I also preheated my oven to 350 degrees, as instructed on the box, and started the process of making the following different flavors:

Blueberry Lemon This light and fruity donut is made with lemon extract and fresh blueberries and one is topped with a powdered sugar icing made with pureed blueberries and the other with a light dusting of powdered sugar.





Chocolate Coffee Cocoa powder was added to the muffin mix on this donut and cold coffee was used to make the first layer of sugar icing and chocolate icing for the second layer.




Chocolate Covered Cherry Cocoa powder and diced fresh cherries were added to the baking mix to create the ultimate burst of flavor! Pureed cherries were mixed with powdered sugar to make the gorgeous dye-free pink/purple icing.





Mint Chocolate Cocoa powder and peppermint extract were added to the baking mix to create a chocolate mint donut flavor. Cocoa powder and peppermint extract were also added to the sugar icing.






Pineapple Mango A light and fruity donut containing frozen diced pineapple and mango, which was added to the baking mix. The icing is powdered sugar and freshly squeezed orange juice.





Strawberry Lemonade Lemon extract and diced fresh strawberries are the flavor in this delicious muffin mix donut. The icing is made with pureed strawberries and powdered sugar.




SunButter Chocolate Cocoa powder was added to the muffin mix to create a chocolate donut. SunButter Sunflower Seed Spread and rice milk were used to create the powdered sugar icing for a delicious flavor combo.




The chocolate donuts were by far my favorite, but I am a self proclaimed chocoholic. Just ask my boys. The additional cocoa powder added to the mix seemed to make them less dense. The flavor combination that was my favorite was the Chocolate Covered Cherry. The fresh pieces of cherry in the donut and the burst of flavor in the cherry icing made my taste buds dance.
