HOT MILK CAKE....A CHILDHOOD FAVORITE




Holidays aren't the only reason to turn on the oven and pull out a cake pan........

Lunch and dinner in the south can be fancy or modest. I can remember that there was always a home baked cake on the sideboard at both Mother's and both Grandmother's. In those days, neighbors dropped by for coffee and to exchange a bit of gossip. While the grown-ups were busy in the living room, the children were gathered at the kitchen table with a piece of cake, along with a glass of grape juice over ice with sprig of fresh mint! We would often savor a slice of Hot Milk Cake, either served with fresh cream and berries or toasted in the oven with butter and confectioners sugar! Hot Milk Cake is one of those old Southern favorites!

HOT MILK CAKE 1 cup milk 1/2 cup butter 4 eggs 2 cups sugar 2 cups flour 2 1/2 t. baking powder 1 t. vanilla

Preheat oven to 375 degrees F. Grease and flour a bundt pan. In a small saucepan. melt the butter and the milk together. Do not boil. Set aside to cool for a a bit.
In a mixing bowl, beat the eggs and the sugar until thickened. Add the flour and baking powder. Now add you vanilla and mix well. Pour in hot milk/butter a little at a time while continuing to mix. Batter will be somewhat thin. Now pour the cake batter into the prepared bundt pan and bake for 30 minutes. Cool for 10 minutes and then invert on serving plate.
