WARM SWEET POTATO MUFFINS



These spicy, warm muffins are going to disappear quickly! Nothing smells better in the morning than homemade muffins baking in the oven with that aromatic smell of cinnamon and nutmeg. They are also lovely for the kiddos in the afternoon for snacktime with a cold glass of milk! Hope y'all enjoy!



WARM SWEET POTATO MUFFINS 1 ¼ cup sugar 1 ¼ cup canned sweet potatoes, mashed ½ cup butter, softened 2 large eggs 1 ½ cup flour 2 t. baking powder 1 t. cinnamon ¼ t. nutmeg ¼ t. salt 1 cup milk ½ cup raisins ¼ cup chopped walnuts 2 T. sugar, mixed with ½ t. cinnamon-for topping

Prepare muffin tin with cooking spray. Preheat oven to 375 degrees. Beat together the sugar, sweet potatoes and butter until smooth. Add eggs and blend well. Sift together flour, baking powder, spices and salt. Add to sweet potato mixture, alternating with milk, and stirring to blend. Do not overmix. Fold in the raisins and walnuts. Fill muffin tins with batter. Sprinkle each muffin with cinnamon/sugar mixture. Bake for 25-30 minutes until golden brown. Serve warm!
