Gluten Free Banana Berry Oatmeal Pancakes

I am on a quest to get my family to start eating healthier. I am also trying to eat healthier myself. Swimsuit season is right around the corner and when you live in Florida, that’s a mighty long season! Today I am going to share a super healthy and easy recipe for Banana Berry Oatmeal Pancakes. (I use the word pancake really loosely here.)


Save Print Gluten Free Banana Berry Oatmeal Pancakes
Prep time: 5 mins Cook time: 10 mins Total time: 15 mins
Serves: 6-7 pancakes
Ingredients
  • 2 cups gluten free oatmeal (I use Bob's Red Mill)
  • 4 eggs
  • 2 large mashed bananas
  • ½ cup blueberries or berries of your choice
  • 2 tsp. vanilla
  • 2 tsp. cinnamon
  • * optional- butter, raw honey, syrup, or nut butter as a topping

Instructions
  1. - Mix oats, eggs, bananas, vanilla and cinnamon very well.
  2. - grease skillet with a little vegetable or coconut oil
  3. - drop pancake size amount of mixture in skillet
  4. - push some berries into pancake
  5. - cook on med-lo until golden brown on bottom.
  6. - flip with spatula cook until other side is golden brown
  7. - remove from heat
  8. - top with desired toppings (I used butter and raw honey)
  9. - Enjoy!

My disclaimer… If you are expecting these to taste like IHOP pancakes, they do not. These are “pancakes” for lack of a better word. A healthy, yummy alternative that you can feel good about eating. Sky, Jamin and I really liked these. Hobie on the other hand told me “Mom, these smell delicious and taste, just okay.” Bless his heart. He is such a picky eater! I ended up giving him one of those not so healthy, freezer sausage biscuits and some blueberries plus 2 vitamins to hopefully counter act it. You can’t win them all!

These pancakes were really filling. We all just ate one and were completely satisfied until lunch. If you serve them with a glass of milk, you have all the food groups covered in one balanced meal. I felt like nominating myself for mother of the year after making such a healthy breakfast! Another good thing is, you can whip up a big batch of these and either freeze them individually, or keep them in the fridge for a quick meal. I will definitely be doing that!

It is so much easier for me to make smart eating choices all day, if I start my morning with a healthy breakfast. What do you do that helps you stay on track?
