We're heading into the time of year that feels like one big, all-too-short swoon—slowly and blushingly hot, blurred at the edges, all peach-juicy and giddy. And what that means, even before it's so sticky out that you can barely stand being in the kitchen at all, is that dinners should be as concentrated and fresh-feeling and quick to prepare as they can be.
