To me, there’s no fruit more summery than watermelon. It’s the most refreshing thing to bite into on a hot summer day under the sun. Last summer, one of my friends made the most delicious watermelon salad using an ingredient that I never would have thought to pair with it: feta cheese. It was the perfect combination of salty and sweet; of soft and crisp. Now that summer is here again, I knew I needed to get the recipe from her. Turns out this salad is incredibly simple to make!
Watermelon & Feta Salad
Serves 6-8
Ingredients:
3 cups watermelon, cubed
5 cups arugula (mounded)
3 ounces feta cheese (I used reduced fat because I wanted to keep it as healthy as possible!)
Drizzle of olive oil & balsamic vinegar
Salt & pepper (I used sea salt and fresh ground pepper) to taste
Directions:
This is one of those recipes where you can really add in more or less of any of the ingredients based on your preference – the above ratios worked well for me. To make, combine the watermelon, arugula, and feta cheese in a large bowl. Drizzle some olive oil and balsamic vinegar (as much as you like) over top and add salt and pepper to taste. Toss gently to combine. Serve immediately or store in the refrigerator for up to 3 days.
