Vegetarian pea and cheese fritters recipe...

Leon, their recipes are brilliant and ever since I got their
Fast Vegetarian cookbook Mark and I have been cooking up a storm in the kitchen. I was a little dubious about these pea and cheese fritters before I cooked them but I needn't have worried, these were
delicious. We have incorporated these into our weekly eats as they are so quick and easy to do and I cannot be faffed with fussy or long-winded meals in the week! The recipe said it should make about 6 fritters but we had about 20 in the end and I could only manage 3 before I was full so we will be halving or quartering the quantities next time we make them...
Ingredients: * 500g of peas * 230 ml of milk * 4 eggs * 60g of cornflour * 200g self-raising flour * 1 teaspoon of baking powder * 200g of cheese- cut into cubes (we used a mixture of halloumi and some grated cheese we had left over from earlier in the week) * Salt and freshly ground black pepper * Olive oil (for frying)
Bring a pan of salted water to the boil, cook the peas for 2 minutes then drain and mash roughly using a potato masher.
Whisk the milk and eggs together in a bowl and slowly add the flours and baking powder to form a thick batter.
... and the peas and stir into the mixture. It may look pretty gross but I promise it will taste amazing!
Heat a little oil in a pan and drop in the mixture, flatten slightly and fry until browned on both sides. The recipe suggests doing it a tablespoon at a time but we decided to do larger ones and then chop them up as we have a mini omelette pan which was ideal.
Drain on kitchen paper (if necessary) and enjoy!
