Thai Peanut Rice Bowl


I am excited to share one of my favorite new recipes using Minute® Ready to Serve Rice. While this post is sponsored, all thoughts and opinions are 100% my own.

Have I told you yet that school starts here on Monday? Can you tell I’m a little stressed thinking about it. I’m looking over our calendar and I can feel at least 10 new gray hairs popping up. I’ve gotten used to a laid back schedule where dinner could take awhile to make and no one really cared. That all changes come Monday because we add in homework, gymnastics, dance and so much more into our evening schedule. Good thing I have items like Minute® Ready to Serve Rice to turn to so I can still create delicious dinners like a Thai peanut rice bowl in the limited amount of time I have.

I serve some grilled chicken along side the rice bowl but it tastes delicious on its own too. We do this for Meatless Mondays when we are tired of pasta The best part is that the Minute® Ready to Serve Rice is ready in only a minute!

Thai Peanut Rice Bowl Ingredients:

2 cups Minute® Ready to Serve Rice
1 bell pepper, diced
2 carrots, diced
1/4 cup peanuts, chopped
1 Tbsp sesame seeds
1/4 cup cilantro, finely chopped
Peanut Sauce:
1/2 cup natural peanut butter
1 clove garlic, minced
2 tsp grated fresh ginger
1 Tbsp teriyaki sauce
1 Tbsp tamari
1/2 tsp Sriracha
2 Tbsp lime juice
1 Tbsp cilantro, finely chopped
1/2 Tbsp peanut oil

Let’s Make It:

1) In a food processor, combine all of the ingredients for the peanut sauce. Process until smooth. Add to large bowl.

2) Heat rice according to package directions. Add to bowl. Add bell pepper and carrots to bowl. Stir well to combine. Stir in 2 Tbsp of cilantro. Top with chopped peanuts, sesame seeds and remaining cilantro.

I’m going to warn you that this peanut sauce is totally addictive. It tastes amazing. You will also find yourself using the Minute® Ready to Serve Rice all the time because it cooks so quickly. It is the perfect base for stir fry dishes or even casseroles that require rice. You can also just stir in a few items and have an instant meal. And they come in the perfect size for when you are feeding 1-2 people. In addition to the white rice version I used, you can also find Brown Rice, Brown & Wild Rice and Multi-Grain Medley, Jasmine Rice, White Rice, Chicken Rice Mix, Yellow Rice Mix, and Fried Rice Mix.

Ingredients
