Good Eats: No Cook Recipes for Hot Summer Nights

Temperatures have been soaring this month, and the last thing I want to do is turn on my oven. So lately, it feels like I’ve been on a constant search to find recipes that don’t leave me dripping sweat in the kitchen. Luckily, I didn’t have to go too far to find them… We have a wealth of no-cook recipes right here on LaurenConrad.com! From breakfast to lunch to dinner and beyond, here are 11 light and fresh dishes to get you through the rest of summer…

Breakfast

Fructose-Free Smoothie
Nothing tastes more refreshing than a smoothie in the summer. I often eat eggs for breakfast, but when it’s super hot out, I find that an icy, blended beverage is just what the doctor ordered. My go-to smoothie lately has been the Dark Chocolate Salty Maca Crunch smoothie from this post. It tastes so creamy and indulgent that it’s almost hard to believe it’s healthy! It also keeps me feeling full until lunchtime, which a lot of fruit-based smoothies just don’t do.

Overnight Oats
If you think that cold oatmeal sounds strange, then you’ve never tried Lauren’s overnight oats. A mixture of creamy yogurt, rolled oats, and your favorite toppings—all you have to do is mix your ingredients together and set them in the fridge overnight to chill. I wouldn’t eat my oatmeal any other way this time of year.

Lunch or Dinner

The Perfect Cheese Plate
One of my favorite lazy-yet-gourmet dinners is a cheese plate. It’s perfect for those nights when you don’t want to turn on your oven or do any sautéing. Add some crudité to make sure you get your greens in, and you’re good to go!

The Raw Salad
The name of this salad says it all. Made with arugula and thin-sliced beets, tomatoes, carrots, and radishes, it is fresh and light as can be. The walnuts on top add a bit of healthy fat and protein to make this salad extra satisfying.

Truffled Avocado, Tomato, and Hearts of Palm Salad
This salad is a long-time favorite of mine. It’s super simple to whip up, but the truffle oil gives it a gourmet twist. And avocado and hearts of palm make it a little heartier than your average green salad.

Harvest Quinoa Earth Bowl and Seared Ahi Tuna Earth Bowl
If you’re looking for a salad that is a little more filling, Savour This Kitchen’s signature Earth Bowls are filled with grains and protein in addition to lots of fresh veggies.

Perfect Picnic Sandwiches
The sandwich is an old lunchtime standby, but it’s especially perfect when the weather is warm and you can take your midday meal outdoors. These four perfect picnic sandwiches include flavor palettes like goat cheese, cucumber & balsamic vinegar and almond butter, jam and shredded coconut.

Afternoon Snacks

Healthy Protein Cookie Dough
This sweet snack is chock full of protein to get you through that mid-afternoon slump. It’s made with chickpeas and peanut butter, which sounds strange, but I swear it’s really good!

Healthy Poolside Skewers
These skewers are super tasty, and don’t require firing up the barbecue. You can snack on a couple, or make a full meal out of several of them. My personal favorite is the pasta salad skewer.

Sweet Treats

Raw Vegan Strawberry Coconut Cheesecake
This delectable dessert is a healthy, raw version of the classic New York cheesecake. The greatest thing is that all you need to make it is a food processor or Vitamix blender—no hot oven at all!

Apple No-Bake Chocolate Tart
It’s not easy to find a “baked good” that doesn’t require baking. But similarly to the cheesecake above, the crust is made from blended fruit and nuts.
