Breakfast is my favourite meal of the day, whether it be a slap-up Full English Breakfast (called a FEB in our house), a buttery croissant served with ruby-red raspberry preserves, creamy porridge, toast and Marmite (I’m a Marmite lover) or something a bit healthier, such as my recipe for today for Betavivo Blueberry & Yoghurt Breakfast Pots. So, apart from the yoghurt and blueberries, ingredients we all know, what is Betavivo? Betavivo are crispy oat hearts with a high content of beta-glucan, which lowers cholesterol and blood glucose; they are made in Sweden with natural raw materials from oat bran, cornmeal and fructose (from apple).

I am always on the look out for healthy food and so when Betavivo sent me a week’s worth of these oat hearts to try, l was fascinated to see what they tasted like. To enjoy them at their best, I devised a quick and easy breakfast recipe – it is suggested that you eat them with milk, like your usual breakfast cereal, or add them to other cereals, but being a fruit and yoghurt lover, I decided to create some little breakfast pots using my Betavivo oat hearts. As I had a small punnet of blueberries and a couple of pots of thick Greek style yoghurt, it seemed natural to add my Betavivo hearts to those ingredients, along with a sprig or two of fresh mint leaves.

These little Blueberry & Yoghurt Breakfast Pots were delicious and the Betavivo oat hearts added a wonderful crunch; they tasted sweeter than expected but their was a definite oaty taste and the texture was light with the hearts holding their shape well when added to the yoghurt. (I hate soggy cereal!) So, who should think about adding Betavivo to their diet? Here are the recommendations from the official UK website:

Ingredients

  • 2 x small pots of natural Greek yoghurt
  • 75g fresh blueberries
  • 2 x packets Betavivo oat hearts
  • fresh mint leaves, to garnish

Note

Directions


Step 1 Layer the ingredients in small water glasses, starting with yoghurt, blueberries and then Betavivo oat hearts.
Step 2 Continue to layer this way finishing with some blueberries and a scattering of Betavivo oat hearts.
Step 3 Garnish with fresh mint leaves.
