Apple Pie & Nuts Stuffed Persimmons

“Hi! What’s good under the hood?” “Warm and bubbly, if you ask me!”, said one persimmon to another. =P okay okay, let’s keep it adult in her, shall we? (note-to-self) But good lord, I’m still stuffed from these 2 bad boys and I don’t get why I haven’t tried it way sooner. As you may have read on my Instagram feed, I am really sick of being so fatigued and feel like I don’t know how to get through a week, as being a nanny 4 to 5 days a week. It’s been coming to a point that I really wanted to get my body scanned, blood check etc, but I think I already know what is going on. The winter is coming closer, Autumn has kicked in and I am BEYOND loving it, including the long, dark cozy nights in with my boyfriend. Which get accompanied with some nice glasses of red wine, crackers with the 5 different cheeses we love so much, my boyfriend’s home baked sweets (not guilt-free) and so many other ‘bad night snacks’. And in the early dark morning, when I can’t get out of bed easily as I am a night owl and usually can’t sleep before 1AM but force myself to get into bed at least before midnight, I often grab a banana and then get out of the house to get to work. And when I get there I sometimes just have bread or anything for breakfast/lunch and then again when I’m hungry right before going home. The fact is: I have become lazy, and I get even more lazy and fatigued when I am already lazy and fatigued. Also I use this excuse for myself to not workout, while I know I would feel so much better after, just like I did last Spring. And at night we cook a lot of healthy dishes, that hasn’t really been the problem, it’s just being so damn tired during the day and bloated almost 24/7. So yeah, I am DONE with it! I’ve said it many timed before, but this time I really have to make a change for myself.

The change; what will it be exactly? Well, I have been reading into the 801010 book by Dr Douglas N. Graham, which was recommended by 2 darling Instagram friends and I am happy I did! I have been flipping through it and it makes a lot of sense, yet I don’t know if I can keep up eating raw like that for a long time. I have to admit; I love my cooked meals at night, and we have already left out meat (sometimes we eat chicken but mostly veggies and some fish), which gets me to the other lifestyle that I was interested in: Raw till 4. But I think I just have to do what feels good for my body, and start experimenting or even go back to last Spring when I felt soo much better. I love my warm oatmeals, and when I don’t want to heat it I just have it as an oatful smoothie by adding greens and fruits, lovely mixture I must say! But today I wanted to try something different. I bought a couple of persimmons for a nice bargain on the market yesterday and I just HAD to oven bake them. The thought of this beyond sweet fruit getting into my oven and it turns out being even more sweet? It drove me WILD! WILD I say!! And what better combination would be persimmons with apples? GOD YES!!! I wanted to keep it simple and for those who are on a raw diet or lifestyle; you can skip the oven-step and simply have it just like that, it is amazing too :) On to the recipe:

Apple Pie & Nuts Stuffed Persimmons

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Serving Size: 2

Ingredients

  • 2 persimmons
  • 1 apple (I kept the skin on)
  • 2 large and soft medjool dates (soak them for 30 min in hot water when they need more softness)
  • 1/4 cup raw almonds
  • 1/4 cup pecans or any other nuts/seeds you like
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger (or freshly grated)
  • 1/4 tsp ground cloves
  • 1/4 tsp cardamom
  • 1/4 tsp fresh vanilla bean inside
  • Couple of chopped pecans for topping
  • Optional: honey for topping

Instructions

  1. Preheat oven on 400F/200C
  2. Slice a thin amount of the butt so it remains standing up
  3. Slice off the top and save for garnishing, cut around the core and spoon the inside out
  4. Blend the persimmon insides and the rest of the ingredients (except for the chopped pecans for topping) as finely as you want it to be.
  5. Stuff the persimmons with the mixture and place in the oven for about 10-15 minutes. I did it for 5 minutes because I was curious how it tasted and it was great!
  6. Add toppings and enjoy!
  7. --- For those who want to eat raw, you can just skip the oven-step, add the toppings and devour.

Notes

I was beyond stuffed after 2 of these, but I think next time I will have just 1 and make a nice green smoothie to get more nutrients at once.

Like I mentioned in the notes-section; I can recommend just having 1 stuffed persimmon and make a nice big green smoothie with all the veggies and fruits you like for breakfast, just to keep you going and get more nutrients at once. But next to that: IT IS AMAZING! Perfect for autumn, and you can also make it a super nice dessert by adding some homemade banana ice cream and some fig sauce over it. Makes me drool all over my keyboard when I think about it, can’t wait to try!
