The name is a mouth full, but seriously: you really want to stuff your face with the entire plate after you tasted one! I’ve never used cardamom before but seen many recipes go by where I saw this ingredient. How could I have NOT used this before? With coconut it’s just THE best combination, I can confirm ^_^
What you need for about 30 bliss balls:
- 3/4 cup cashew nuts without skin (not soaked)
- 1/2 cup coconut flakes
- 1/2 cup oats or spelt flakes and more in a bowl for the cover-up
- 1,5 scoop Vanilla Whey (I used Whey Delicious – Vanilla from XXL Nutrition)
- 12 big juicy medjool dates, pitted (soak for an hour when they’re a bit dry like I did, don’t toss the water)
- 2 tbsp coconut oil
- sweetener to taste
- 3 tsp cardamom powder
- 1 tsp cinnamon powder
- 1/2 tbsp vanilla extract
- Optional: splash of water or milk of choice
- Optional: Goji berries for cover-up
Directions:
- Blend the cashews into a chunky flour, then add in the oats for a couple of seconds. Don’t make your flour too fine, I personally love the rough structure.
- Place the flour in a seperate bowl and stir in the coconut flakes, coconut oil, protein powder, cinnamon and cardamom.
- Mash in the dates with either your hands or a fork, with the hands it’s much easier though. Add a splash of milk or (date) water when it’s still too dry.
- Roll nice balls of your preferred size, I made quite small ones since they’re pretty filling.
- I sticked about 5 goji berries on each ball on half of the batch, then rolled everything in coconut flakes. When it’s too dry for the coconut flakes to stick, make the balls a bit wet with the water your dates soaked in.
You can use any flavor of protein or nuts, you can add anything you like really =) I store them in the fridge in an air tight container, can last upto a week, maybe 2. I just love how amazing the taste is of these cardamom bombies! Enjoy!!
