Fitness Friday | Meal Prep with Salad in a Jar Recipes

You and I both know preparation is everything. We are well aware that success – in any form, not just with fitness and weight loss – comes to those who properly prepare themselves. I have personally experienced the huge difference taking the time to prep and plan my meals makes. So why I don’t do it consistently is beyond me!!! Well, that is water under the bridge because this week, I returned to meal prepping HARD. And as a result (of course) avoiding temptation and sticking to a healthy diet was easy. Duh!

Meal Prep for Lunch: Salad in a Jar

Lunch is my most challenging meal. I actually prefer eating dinner at home so that’s easier, but rarely wake up in enough time to pack lunch plus my cafeteria at work sells such tasty fried foods! So while sandwiches and wraps are great options, I need things that I just have to grab out of the fridge in the morning – no assembly required. Well, except for when my boo is in town…he made me a sandwich every morning. *sigh* I miss that! Anywhooo, this is why the salad in a jar is PERFECT for me – just grab and go! Remember when I raved about them last year? Well, I broke out those mason jars and got to packing this week. I was so tired Sunday night, but I was so happy I stayed up and completed all of my meal prep every single day at lunch as I enjoyed my delicious, healthy salad!

Tuna Caesar Salad in a Jar Recipe Meal Prep

For the first half of the week, I enjoyed tuna Caesar salad in a jar, layered in the following manner beginning at the bottom: Caesar dressing, tuna (canned, packed in water), chopped hard boiled egg, romaine lettuce, shredded parmesan cheese. For the second half of the week, I had an amazing apple walnut salad!!! You can see the steps in the pictorial below as I layered: chopped apples, craisins (dried cranberries), walnuts romaine and spring mix lettuce and crumbled feta cheese. I shared a couple with those who were curious as to whether or not the lettuce would stay crisp (they were amazed). The apple walnut salad recipe was adapted from Le Creme de la Crumb and I tossed in the dressing after releasing the vacuum seal, normally I add the dressing to the jar. It was absolutely delicious – trust it is definitely a must try!

Meal Prep for Dinner: Oodles of Zoodles

First, I am still really loving spiralizing (get my iFit spiralizer here). I will share additional recipes in the coming weeks but long story short, zoodles are the business. In fact I love them so much, I plan to finally explore other zucchini recipes I’ve seen floating around over the last few years such as zucchini boats, pizza and lasagna. Getting back to my meal prep, dinner this week consisted of vegetti with extra lean ground turkey and lemon pepper zoodles with salmon and asparagus. The key for the meal prep was right after purchasing, I spiralized my zucchini/squash then stored in vacuum sealed ziploc bags until I was ready to use. I cooked the ground turkey tomato sauce and vegetti for the first half of the week and the lemon pepper salmon zucchini and squash (similarly prepared here) for the second half of the week. I absolutely LOVED both meals. My mom and good friend Carmelita both came to visit and enjoyed the vegetti as well.

The salmon zoodles meal was equally easy because I marinated everything overnight then simply had to broil and saute the day I had it for dinner. Easy peasy. I didn’t spend half my night in the kitchen and there was no major clean up – I only had one pan to wash. All it took was a bit thinking in advance, not hours in the kitchen!
