Mojito Mocktails


Whilst we've all been melting thanks to the #UKHeatwave I have had a serious craving for icy, refreshing drinks so to curb that feeling I mixed up a Mojito Mocktail! It's super simple & takes a couple of minutes to prepare, so anyone can have a go! I had a glass chilling in the fridge for Dom when he got home from work & I'll be sure to serve this when we get round to having our housewarming too!
(Please excuse the state of the walls, we are in the middle of decorating!) Ingredients 1/2 cup of Mint Leaves Juice of half a Lemon 3 tbsps Sugar Ice Cubes Lemonade Method First things first, prepare a sugar syrup. To do this simply pour 1/2 cup of water into a pan, followed by 3 tablespoons of Sugar and heat on a low flame. The Sugar will dissolve after a couple of minutes, once dissolved allow to simmer for about 30 seconds before leaving the syrup to cool to room temperature. Next up, grab some serving glasses, I chose Mason Jars because, well why not! Add in 7-8 Mint Leaves, followed by 1 tablespoon of Sugar Syrup & around 1 tablespoon of Lemon Juice. I literally just squeezed lemon juice onto a spoon over my glass, meaning I was pretty generous with it but you can add as much or as little as you want really! Then comes the fun part, get a muddler or you could use the end of a wooden rolling pin & crush the mint leaves. This helps to release the true flavours & helps give the drink that refreshing tang! Add in a couple of ice cubes & then top up your glass with Lemonade, I used Sprite because I prefer the taste but whatever lemonade is fine! Or you can use soda water if you like. Finally, pop in a straw, decorate with a slice of lemon & mint leaves if you want & enjoy your Virgin Mojito! This recipe makes about 6 glasses, it's easy to switch up if you require more or less.
