For early mornings: Freezer Breakfast Burritos


While I absolutely love my husband, there's about a 0.1 percent chance of me getting up with him at 4am to make him breakfast. Enter: Freezer Breakfast Burritos. There are about a million variations of these floating around online; this is my take on them! My husband loves just being able to grab one of these out of the freezer and microwave it after he's rounded on his patients...because who can honestly eat breakfast at 4am??

Breakfast Burritos
Ingredients
1 onion, diced
1 bell pepper, diced
1 cup mushrooms, diced
1/2 cup ham, chopped
8 eggs, beaten
1/2 cup salsa
1/2 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. pepper
1/2 cup shredded cheese
8 wheat tortillas, fajita size

Saute the onions, pepper and mushrooms in olive oil to desired doneness. Add in the ham and seasonings; cook several minutes longer. Beat the eggs and pour into your skillet with the veggies & ham. Cook, stirring occasionally, until eggs are set. Mix in the cheese and let melt.

Tear off 8 pieces of aluminum foil. Lay 8 pieces of paper towels over the top of the foil, and lay down the tortillas on top of the paper towels. Scoop 1/2 cup of the egg mixture onto each of the tortillas. Fold the ends of the tortilla under and roll up. Then wrap the paper towel around the burrito, followed by the foil. Seal tightly and place in a freezer bag.

To reheat, remove the foil and put the paper-towel-wrapped burrito into the microwave. Reheat for 1-2 minutes.
