easy weekday meals + back at track


We’re almost to the weekend! It’s thoughts like this that help me get my butt out of bed and subject myself to track torture.

Today’s workout was almost identical to one I did three weeks ago: three one-mile dashes with a minute of standing rest between each one. This week I added on one more half-mile sprint at the end to make it extra tough.
My mile times this week: 6:31, 6:32, 6:33 (plus a final half mile at 3:16). My mile times three weeks ago: 6:35, 6:37, 6:32. Progress!!

Strength training for the day: fence hopping.

Notice something different about Anthony?! He’s wearing a new pair of shoes! Big news.

Anthony’s been sorta ‘meh’ about his Saucony running shoes so we went to Nashville Running Company last night to check out their selection. He fell in love with a pair of lightweight, low profile pair of sneaks. They’re made by On Running, a Swiss brand. Pretty cool!

After our shoe shopping adventure, we came home to an already-ready dinner.
Here’s how this meal came together: On Saturday I made meatballs and froze them; on Sunday I sauteed onions and garlic and kept them in the fridge. Wednesday morning I roasted spaghetti squash while I got ready for work (about 40 minutes) and threw the pre-cooked onions/garlic into the slow cooker with the meatballs, diced tomatoes, tomato sauce, and herbs. Set it and forget it!

Flash forward 12 hours and dinner was done. The only “work” required was heating up the squash and grating cheese. And grating cheese isn’t work — it’s probably my favorite hobby.

This lightened-up “spaghetti” was great! It’s become a go-to meal for us lately, though I might retire it as the hotter days of summer approach.
Another weekday favorite during the past few months: quiche. With bacon.
I made this the other night to take over to Tracee’s house! Her husband’s been out of town for the past week so a girls’ night was in order. I also provided a salad. And Tracee also provided wine
Fun night! And now it’s time to go do the work thing. Speaking of which, anyone use these BuzzFeed tips to get through the workday? I actually do most of them (other than meditation, because that is impossible for me).
