favorite posts from the past + we actually cooked dinner
Good morning! It’s Friday!!!!!! I usually take Fridays (and/or Sundays and Tuesdays) off of running and do cross-training instead.
Although sometimes this blog makes it seem like I run all the time,
I don’t!
Last week I did a list of “favorites,” entertainment-style. This week I was thinking I might throw some of my favorite blog posts from the past at you… oldies, but goodies

I tested out different mascara brands (and became a fashion/beauty blogger for one day)

Back to the present: Last night Anthony and I had to cook dinner for the first time in a long time (in case you missed it, his parents have been staying here for the past few weeks and cooking us delicious food every night).
I think we did a pretty good job.
Anthony was in charge of the fish (simply baked and seasoned with lemon, salt, pepper, and parsley). I handled the veggie explosion on the side.
We had a bunch of random vegetables in the fridge – corn, broccoli, summer squash, and okra. I chopped them all up and added them to some cooked quinoa and breadcrumbs. Tied it all together with a bit of butter, cheese, and milk.
Baked for about 30 minutes in the oven, and… “casserole” complete!

this recipe for inspiration, but altered it quite a bit)
