Fresh Apple Cake

Fresh Apple Cake for fall.

And yes, the cinnamon cream cheese frosting really is the icing on the cake .

Your house will smell cozy and warm and your family will thank you profusely…because this cake is delish!

This recipe makes one 9×13 sheet cake.

Shopping List
1 stick of butter, melted
2 cups sugar
2 eggs
1 teaspoon vanilla
2 cups all purpose flour
1 teaspoon baking soda
a pinch of salt
2½ tablespoons cinnamon, divided
4 cups chopped apple pieces (I used Gala apples)
1 cup of pecan pieces, optional
1 (8 oz) package of cream cheese, softened
2 cups of powdered sugar
a splash of milk

Preheat oven to 350 degrees.

Spray a 9×13 baking dish with cooking spray. Set aside.

In a mixing bowl, stir together your melted butter, sugar, eggs and vanilla with a spoon. Set aside.

In a second mixing bowl, whisk together your flour, baking soda, salt and 1 tablespoon of cinnamon. Slowly stir the dry ingredients into the wet ingredients. Stir in your chopped apple pieces and pecans.

Pour your batter into your prepared baking dish and bake 35 to 40 minutes or until a wooden toothpick inserted into the center comes out clean.

Remove from oven and allow to cool completely before frosting.

To make the frosting, beat your cream cheese, powdered sugar and milk together with an electric mixer. Add a bit more powdered sugar if your frosting is too thin or a bit more milk if it’s too thick. Beat in your remaining 1½ tablespoons cinnamon.

Spread frosting over cooled cake and serve.

When not enjoying, keep refrigerated.

I could eat this for breakfast. Okay, maybe I did have a little piece for breakfast with my coffee. No judgments please :).
