It's not only Monday...it's the FIRST DAY OF SCHOOL Monday!
Eeks!
As of today, I have a first grader and kindergartener. Someone please make time stop. They're growing up just too fast. I.cannot.take.it.
For me, the year always starts over again in September. It's the season of fresh beginnings and new chapters. We're back to dance, sports, homework, early bedtimes, school fun and more! Plus...we have fall and Christmas in our future. Let's all pause and appreciate that even though I'm sad summer is over...I am totally excited that fall is up next :).

So, what are we having the first week of school? Something yummy, something simple and something that can be on the table quick!

Andrea's Pulled Pork is one of our very favorite recipes! Not only is it incredibly delish but it's pretty much the simplest thing you can make (and the slow cooker does 99.9% of the work!). I'm going to suggest you make double the amount of pork because tonight you'll eat it like a sandwich and tomorrow night...

...you're going to use the leftovers and make Barbecue Quesadillas. Words just cannot express how much I adore these quesadillas. So incredibly good!

On Wednesday night, I'm suggesting you hunker down after your busy day and enjoy breakfast for dinner. My Bacon & Avocado Scrambled Eggs over Waffles is like my favorite thing ever. Oh my! We're big fans of breakfast for dinner, so for us, this is the ultimate treat! (And it's simple to make too!)

When I think of the beginning of school, I think of mac and cheese. My Mexi Mac is a yummy twist on that boring boxed stuff.

And let's end our week on the patio with Sweet Corn Topped Burgers. Yes. Burger, goat cheese and a corn relish. TGIF!

Our bar for the week? Something totally first day of school-ish!

My PB&J Bars! My kiddos think these are so good and personally, I think they're great with a cup of coffee. A little first day of school and a little PB&J :).
