In my quest to find or create easy peppermint inspired recipes for your Christmas baking I happened upon several versions of Peppermint Bark Brownies. Some of these recipes were over complicated with supermoms actually making brownies from scratch! I love brownies and I love peppermint bark so I just combined to two into this easy, Christmasy recipe. Make sure you are following my Peppermint board on Pinterest!

I am all about easy recipes and it doesn’t get much easier than these Peppermint Bark Brownies. If you can make brownies from a box, you can make these brownies!
Peppermint Bark Brownie Recipe

Ingredients
- 1 boxed brownie mix and eggs and oil as directed on box
- 3 full size candy canes, crushed
- 1 1/2 cups white chocolate morsels
Directions
- Preheat oven as directed on brownie box.
- Prepare 8×8″ pan for baking.
- Mix together the brownie mix, eggs and oil as directed on box.
- Bake according to directions on box.
- Remove brownies from oven and set on wire rack to cool.
- Immediately after removing brownies from oven, place the white chocolate morsels in a microwave save bowl.
- Microwave at 30 second intervals, stirring in between, until chocolate is completely melted.
- Stir in crushed candy canes.
- Spread the white chocolate/candy cane mixture over the brownies.
- Refrigerate for at least 1 hour before serving.
