Noms: Bacon Egg and Toast Cups (Instagram-Ification)

Morning Lovelies!

I’ve got another recipe to share with you all today. I’m a huge fan on breakfast (when I’m actually awake during that time of the day). However I absolutely hate making bacon stove top and I usually cook it in my oven for foolproof deliciousness. So what’s better than bacon, eggs and toast all in one cute little package?! Other than french toast, my answer to that question is NOTHING IS BETTER. Besides, combining everything in one baking dish equal less dirty pans to clean later.

This one was an instant favorite for my boyfriend and me and SO simple to create! You could easily double this recipe to make 12 servings, of cut it in half if you’re just feeding a small army of 2-3. ^_^


Bacon Egg and Toast Cups

Prep Time: 10 minutes | ‘Cooking’ Time: 20-25 minutes | Serves 6

Recipe adapted from The Noshery.

What You’ll Need:

  • 6 slices of bread
  • 6 eggs
  • 6 slices of bacon
  • 1/2 cup of shredded cheese (I used sharp cheddar this time)
  • salt & pepper

1. Preheat oven to 400 degrees. Spray muffin pan with non-stick spray.

2. Using a cookie cutter (or drinking glass in my case), cut circles out of bread slices about 3 inches in diameter.

3. Take bread circles and press them into the muffin pan, set aside. If any of the bread doesn’t fit into the bottoms of the muffin cups it’s fine to smoosh the rest of the bread circle up the sides of the muffin cup.

4. Heat a large skillet on medium-high. Cook bacon on the skillet until partially cooked but still pliable, about 3 minutes.

5. Shape bacon strips into the toast cups, fill with 1 Tbs of shredded cheese. Place in the oven for 5 minutes, allowing the bacon to toast just a little more. Remove from oven.

6. Crack your egg and drop eggs into the cups. Sprinkle with salt & pepper to taste. Place back in the oven and cook until white begins to set, about another 8 – 12 minutes. The yolk should be creamy.

7. Remove from oven when done and pop out using a spoon, serve warm.

There you have it! A nice and easy breakfast that’s sure to please. The bacon comes out perfectly cooked and the egg yolk is nice and runny, just how I like it with my toast. I’ll have to try it with different cheeses now too. I think these bacon egg and toast cups with dill havarti would be absolutely divine!
