{The BEST Cocktail Meatballs}

I’ve had this recipe in my recipe box since the beginning – one of the first recipes I ever wrote down. It was from a friends mom & it has always been in my arsenal…not sure why I haven’t made it for so long….but glad I did!!

I love me a good meatball….

A little trick that I always use is to line my baking dish with foil & then spray that (or use the non-stick style foil) – makes for EASY clean up (catches all the grease that you can let set for a little while and then wrap it up & toss) thank you very much!

Here’s the recipe (looks like a lot of ingredients but you probably have them all in the pantry & they add a lot of depth to the meat-a-ball!! did you hear that little accent – you’re saying meat-a-ball – now aren’t you?) tee hee!!

(psst – I usually double or triple the batch – might as well….)

BEST SAUCY COCKTAIL MEATBALLS

1 pound ground beef
2 eggs
1 cup cracker crumbs (crush saltines // use breadcrumbs // tear up 3 pieces of white bread)
9 drops Tabasco
pinch salt
2 T minced onion
1/4 t garlic salt
2 T red pepper flakes

Preheat oven to 350 degrees. Form into small balls & place in shallow baking pan // Bake for 30 minutes until browned

SAUCE
3/4 cup ketchup
1/2 cup water
1/4 cup vinegar (white)
1 tsp yellow mustard
1 & 1/2 t minced onion
4 t Worcestershire sauce
6 drops Tabasco
1 and 1/2 t salt

Combine sauce ingredients, place drained meatballs in sauce & simmer at least 1 hour… (can do this in a pot on the stovetop or a crockpot to keep warm though they probably won’t last long!!)

ENJOY!!
(great for game day > appetizers > parties > potlucks
oh and leftovers are AWESOME on buttered hoagie rolls with some cheese melted > all gooey on top – mmm!)
