Recipe: Lettuce Wrap Chicken Tacos

These lettuce wrapped tacos are a great way to get all the deliciousness of tacos, but without including bread - making it a gluten-free option. They taste incredible and you can choose the toppings...


You Will Need:

  • Little Gem lettuce leaves (~ three per person)
  • Chicken mini breasts/strips
  • Cajun spice
  • Paprika
  • Chilli powder
  • 1 Red onion
  • 1 Red pepper
  • Handful of cherry tomatoes
  • 1 Avocado
  • Sour cream
  • Coriander
  • Lime for dressing
  • Oil/coconut oil for cooking

Step One
Place the chicken on a clean chopping board and slice each strip in to smaller sizes - we want strips that aren't too big to fit in our lettuce leaves.
Add your chicken strips in to a bowl and sprinkle in your spices. We added cajun spice and a little chilli powder and paprika - just a small amount of each should do. Mix throughly with clean hands to ensure an even coating of seasoning.

Step Two
Chop your onion and red pepper finely and leave to one side. Carefully separate your lettuce leaves, wash thoroughly and dry well. Place these on your plates.

Step Three
Heat up a little oil (we went for coconut oil which is beautiful and good for you) in a pan and add your chicken, laying it evenly. Cook on both sides until the chicken looks golden, and near the end add in your vegetables and leave it to cook for a further few minutes. Once the chicken and vegetable mix is cooked through, remove the pan from the heat.



Step Four
On a clean chopping board, chop your coriander finely. Peel and slice your avocado and cut up some cherry tomatoes if you wish. Slice a lime in to sections.

Step Five
Spoon your cajun chicken mix in to each lettuce leaf, making sure an even helping is in each leaf. Follow with your avocado and tomatoes, then add a dollop of sour cream and a sprinkle of coriander. Squeeze on a little lime and you're set!


Time to tuck in. Remember you can add in more vegetables to replace chicken, or opt for fish instead.
