Sunday Funday with Ashley

When one of your best friends comes to visit you, there is nothing better. Non-stop chatting, lots of laughter and plenty of ridiculousness will always ensue and I am coming away from this weekend feeling so grateful I have a friend like Ashley in my life!

Ashley arrived on Saturday and I’m pretty sure the excitement of just having her in town caused me to totally forget to break out my camera for the entire day. We spent Saturday lingering over lunch at The Mayobird, walking around outside since the weather in Charlotte this weekend was incredible, grabbing sushi for dinner with Ryan and heading out for drinks at ICE Martini Bar.

It was wonderful and we somehow woke up feeling rather energetic on Sunday which was a great bonus since we had a full day of plans ahead!

Breakfast

After cuddling on the couch with Sadie and watching an early morning episode of Friends thanks to Netflix, Ryan, Ashley and I got dressed and drove over to Toast in downtown Davidson for a fabulous breakfast. I knew Ashley would love Davidson (it’s seriously the cutest little town) and since the food at Toast is amazing, the decision to head to our favorite local breakfast spot was an easy one.

I ordered the Western egg white omelet with a side of breakfast potatoes and fresh fruit and shared a side of French toast with Ashley. For the locals: A side of French toast is only $2.99 and you get four thick slices – can’t beat that!

With full bellies, we left Toast and drove home to quickly pick up Sadie and head out on our next activity of the day: A late morning hike at Lake Norman State Park!

Ryan, Ashley, Sadie and I covered five miles in right around two hours.

Despite the bare trees, the hike was beautiful because we had a view of gorgeous Lake Norman for the majority of our time on the trails. The sun was shining and we could not have asked for better weather!

We finished our hike ready for a late lunch and, after dropping Sadie off at home, grabbed a bite to eat.

I opted for a hot roast beef sandwich with a side of homemade chips and had no problem polishing off every last bite.

After lunch, we came back to our house and relaxed before I had to say goodbye to Ashley. I drove her to the hotel where she is staying for a conference she is attending today. Even though our visit was a very short one, I was so happy to have Ashley in town and had such a great time with her! After hugging Ashley goodbye, I drove back home to spend the last couple of hours of our Sunday with Ryan and Sadie who loved life underneath a cuddly blanket.
