Andes Mint Chocolate Brownie Recipe

Carol of Cafe Carol is sharing this delicious Andes Mint Chocolate Brownie Recipe that would make the perfect St. Patrick’s Day treat!

So what do you do when you have a leftover bag of Andes Mints?! … That’s easy, make some brownies! These brownies are super moist, fudgy and super delicious! They are topped off my mint frosting and chocolate glaze and sprinkled with Andes Mints. Can you say heavenly?!

Ingredients

1. For the brownies
2. 11 ounces bittersweet chocolate
3. 12 tablespoons unsalted butter
4. 1 1/3 cups sugar
5. 3 large eggs, lightly beaten
6. 3/4 cup all-purpose flour
7. 1/4 cup cocoa powder
8. 1/4 teaspoon salt
9. 1 1/4 cups walnuts, toasted and chopped (optional)
10. Andes mints, chopped
11. For the mint topping
12. 2 tablespoons unsalted butter, softened
13. 1 cup confectioners' sugar, sifted
14. 1 tablespoon heavy cream
15. drop of oil of peppermint
16. food coloring, if desired
17. For the chocolate glaze
18. 1 square unsweetened chocolate
19. 1 tablespoon butter

Instructions

1. For the brownies
2. Preheat the oven to 375 degrees. Line a 8x8-inch baking pan with foil and set aside.
3. Melt the chocolate and butter in a mixing bowl set over a pan of hot water. Remove from heat and let cool. Stir in the sugar, eggs, flour, cocoa powder, salt, and walnuts.
4. Spread the batter in the prepared pan. Bake for 30 minutes.
5. For the topping
6. Blend all ingredients together with a hand mixer. Spread over cooled brownies. Refrigerate until firm.
7. For the chocolate glaze
8. Melt chocolate and butter together, drizzle over mint topping.
9. Sprinkle Andes mint pieces on top; chill and cut.
