Chia Pudding Recipes You Can Make in Your Sleep

Sleep is actual physiological gold, which is why I don’t believe anyone should have to choose between having a healthy breakfast and savoring their last drops of precious slumber.

Sure it can be cozy AF to make an omelette or pancakes on the weekend when time is on your side, but weekdays are a different story. For crunch times, I’m all about a no-brainer, make-ahead breakfast that can be mixed and matched with endless combos to keep things interesting. Oatmeal, you’re thinking. But no, I’m talking about chia pudding, which is like oatmeal’s lower-sugar, grain-free, paleo-friendly sibling. Below, three of my current favorite variations.

Cacao Tahini Overnight Chia-Seed Pudding

1 cup full-fat coconut milk
1/4 cup chia seeds
1 Tbsp maple syrup
2 tsp tahini
1 Tbsp cacao powder
pinch sea salt
optional toppings: cacao nibs, unsweetened shredded coconut

Place all the ingredients (save for the optional toppings) in a bowl and mix until well combined. Let set in fridge overnight (at least four hours). Top with cacao nibs and shredded coconut if desired.

Matcha and Wasabi Pea Overnight Chia-Seed Pudding

1 cup full-fat coconut milk
1/4 cup chia seeds
1 Tbsp maple syrup
1 tsp matcha
pinch sea salt
wasabi peas

Place all the ingredients (except for the wasabi peas) in a bowl and mix until well combined. Let set in fridge overnight (at least four hours). Top with wasabi peas.

Coconut Kefir Overnight Chia-Seed Pudding

1/2 cup full-fat coconut milk
1/2 cup coconut kefir
1/4 cup chia seeds
1 Tbsp maple syrup
pinch sea salt
optional toppings: goji berries, bee pollen

Place all the ingredients (save optional toppings) in a bowl and mix until well combined. Let set in fridge overnight (at least four hours). Top with goji berries and bee pollen if desired. Enjoy following a restful slumber!
