Chicken vindaloo and a giveaway!

Well February…….. hey there. Welcome. You bring good things. Like tear jerking and mega inspirational cookbooks, spicy as heck chicken vindaloo from scratch, and oh yes, a giveaway.

This recipe was created by a woman named Grace Estibero, an 82 year old grandmother living in the northern quarter of Mumbai, India. I had an incredible afternoon one day reading all about her, along with many many other grandmothers, and their favorite recipes they prepare for their families. Grace Estibero shared her recipe for chicken vindaloo, a spicy hot Indian curry traditionally made with pork. I gave it a whirl, and oh man, it blew me away.

Chicken vindaloo recipe by Grace Estibero from In Her Kitchen, a cookbook by Gabriele Galimberti
Serves: 6 servings
Ingredients
  • 2 red onions, finely diced
  • 10 dried red finger chilies
  • 2 fresh hot green chiles, roughly chopped
  • ½ to 1 teaspoon ground cinnamon
  • 10 garlic cloves, roughly chopped
  • 1 (1/2 inch) piece of fresh ginger, peeled and roughly chopped
  • 1 teaspoon ground cumin
  • 10 whole cloves
  • 10 whole black peppercorns
  • 1 teaspoon ground turmeric
  • 1 Tablespoon tamarind paste
  • 1 Tablespoon sugar
  • 8 skinless, boneless chicken thighs (about 2 pounds) cut into bite size pieces
  • Salt and freshly ground black pepper
  • 2 Tablespoons vegetable oil

Instructions
  1. Combine 1 of the onions, and next 11 ingredients, through sugar in a blender. Add ½ cup water and blend until chopped well. Add another ½ cup water and puree until smooth.
  2. Season the chicken pieces with salt and pepper
  3. In a large skillet, heat oil over medium heat. Add the remaining onion and saute until golden, about 5 minutes. Add puree to skillet and stir well.
  4. Simmer for 5 minutes, then add chicken to skillet. Simmer for another 15 minutes, or until chicken is fully cooked.

In Her Kitchen is quite possibly the single most inspiring and emotional cookbook I have ever read. And when I say ‘read,’ I mean actually sat down and read it. It’s a book full of stories, strong women, culture, and emotional ties to food. Each recipe is created by a grandmother, and is accompanied by a photo of her in her home, as well as a brief glimpse into her history. The recipes in In Her Kitchen are made with soul, with absolute love, and it’s impossible not to feel that as you recreate them at home.
