Pea Pesto Crostini for #SundaySupper

Tonight’s the night: the Academy Awards! I don’t know about you, but I get oh so excited when it comes to viewing the red carpet, as well as the rest of the evening’s festivities. And what better way to enjoy the entertainment than with fabulously fashionable food? I’m bringing my Pea Pesto Crostini to the party…

Awards shows are always one of my favorite times for TV. Admittedly, I sometimes skim through the actual awards show…because the red carpet is truly where it all is at for me. I love seeing the beautiful red carpet gowns, jewelry, hair, makeup, and more. I can’t wait to see what some of my favorite celebrities will show up wearing. Tell me I’m not the only one who dreamed about walking the red carpet in a fabulous dress when I was young. The entire process of selecting a dress, primping and priming, and looking fantastic in general might be a lot of work, but I totally would want to try it at least once. I mean…for scientific research purposes of course. But alas, it seems as though I’ll just be relegated to watching the excitement from my own home instead. Oh well!

Since I’ll be having my own little red carpet viewing party this evening, that means it is time to break out the finger foods! I love small bites for this type of occasion, and these pea pesto crostini are party perfect. Fun fact: I eat peas almost every day. They are one of my all time favorite foods, especially when paired with Parmesan cheese. I eat them by themselves, I toss them with pasta, rice, quinoa, and more. But as a pesto – oh yes! Perhaps a new favorite of mine.

You can put this pesto together in just a few minutes, and they make a pretty platter for your party table. I just love the bright hue of the peas – green is one of my favorite colors. For ease, you can serve these crostini cold. However, if you prefer a hot bite, just pop the tray back into the oven for a few minutes to warm the pesto and shaved Parmesan through. Either way, they are enjoyable!

These pea pesto crostini are easy to make, fresh in flavor and color, and are a fantastic finger food for your next get-together!

Ingredients
  • 16 ounces fresh or frozen peas (thawed)
  • 2 cloves garlic
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon Kosher salt
  • ½ teaspoon black pepper
  • ⅓ cup olive oil, plus additional for brushing on bread
  • 2 tablespoons fresh basil
  • Shaved Parmesan cheese
  • Baguette

Instructions
  1. Preheat the oven to 375 degrees F.
  2. Add peas, garlic, grated Parmesan, salt, pepper, and basil to a food processor. Pulse until combined - about 10 pulses.
  3. Turn the processor on medium speed and slowly drizzle in the olive oil - about 1 minute. Transfer finished pesto to a bowl and set aside.
  4. Slice baguette into rounds about ½ inch thick. Place evenly on a baking sheet and brush lightly with olive oil. Bake for 7-8 minutes until golden brown.
  5. Scoop about 1-2 teaspoons of pea pesto on to each baguette slice and top with shaved Parmesan. Serve, and enjoy!
