Too bad I had to live my life and go run. Oh well. Now I know I should wake up at 6am to go out, curl my hair, go back to sleep, wake up ‘bout 5pm and get ready to go.
After my run I headed north to my mom’s because I had to return one of the dog beds I bought because it was becoming unraveled. Since I was in the area I completed a few other errands. I was a whirlwind of productivity.
I bought ingredients for recipes and projects, hit up the bank for RER stuff and made some trail mix to snack on whilst blogging.
Now Meatless Monday with a Mexican twist is back! I’m trying to keep it meatless on Monday but I feel like cooking vegetarian is harder than just cooking up some chicken and adding it to whatever veggies and microwaved potatoes I’m eating… luckily this is a super easy bean soup recipe.
{Vegetarian. Gluten Free. Easy.}
Ingredients:
Mix ingredients in a pot and heat thoroughly. Top with cheese, chips and avocado. Enjoy!
