Favorite Fifteen Vegan Recipes + Products · January 2017

A month ago I shared that our family would be adopting a mostly plant-based diet. We made this decision after researching and watching various documentaries. It was a choice based primarily off of our health, as the girls and I have always suffered from various issues involving dairy. While I have been completely vegan for the past month, the girls and Ryan have had small quantities of meat and dairy. I am planning to write some posts on all of the benefits we have noticed and share more of the “why” behind our decision, but today I wanted to post our 15 favorite vegan recipes products from the past month! These are all family-friendly and received both Ryan and the girls’ stamps of approval. Below are affiliate links for your convenience.

  • Honey-Lime Sweet Potato, Black Bean Corn Tacos: These were such a wonderful new twist on roasted sweet potato tacos that I have made in the past. We made tacos and quesadillas for the girls and I used the leftovers in a breakfast hash the next morning!
  • Best Fluffy Pancakes: I found this recipe when I had to go dairy-free for breastfeeding and we have been using it ever since! Just sub the non-vegan items with vegan ones. We love vanilla cashew milk, coconut oil and chia eggs/egg replacer.
  • Vanilla Almond Butter: This is my favorite thing to throw into oatmeal or eat on Ezekiel toast/whole grain waffle.
  • One Pot Sweet Potato, Tomato and Kale Rice Skillet: It’s always a win when the kids devour something with kale in it. One pot means barely any cleanup, so this recipe was a major win.
  • Actually Delicious Vegan Mac Cheese: Ok so my oldest is obsessed with macaroni and cheese. It was one of the major foods I just didn’t think she would give up…and then we found this in the grocery store. She picked the white version and it was do delicious! We need to try the cheddar next, but I have never found a more realistic vegan copycat for macaroni and cheese.

  • Baked Apple Doughnuts: These were amazing. I subbed the butter with coconut oil and used applesauce for the eggs. I also made “buttermilk” out of vanilla cashew milk vinegar. They are baked and not fried, which is another reason I love them!
  • Kashi Cereal Bars: Rowan loves cereal bars, but they are always filled with artificial or dairy ingredients. These are the only ones I have found that are vegan. They are a lot more difficult to find than they used to be, but now when I do see them, I stock up.
  • Vegan Stretchy, Gooey Mozzarella Cheese: This is mind blowing. We love pizza and I always used to go cheese-less, but this recipe is fabulous. We love to make spicy margharita pizza with it for date nights in.
  • Avocado Pasta: This has been a long-running favorite in our house. It was the first way I was able to get the girls to eat avocado. It’s extremely creamy and reminds me of an alfredo type of sauce. We have tried a ton of different veggies and it is wonderful every time.
  • Coconut Milk Ice Cream Sandwiches: I saw these at Kroger and had to grab them. Rowan was finally able to try ice cream! It was something that always made me feel so sad – her dairy allergy has kept her from trying a lot of things that kids love. I am so glad they offer so many wonderful dairy-free alternatives nowadays.

  • Buffalo Cauliflower Tacos: I am a serious buffalo lover and these were unbelievable. I even tried them before I tossed them in the sauce and they were just like chicken nuggets! One helpful tip – do not use the coconut cream in the recipe. It has an insane amount of calories. I used unsweetened cashew and almond milk and it was perfect. As soon as we get into our new home I will be making these for the girls and I’m betting they will not even know the difference.
  • Sweet Potato Black Bean Burgers: I only had chickpeas so we used them instead of black beans and they turned out delicious.
  • Vegan Hamburger Buns: We made these to go with the burgers above and they were so good! My stand mixer had already been packed, so I made them by hand and it was really easy.
  • Vegan Mozzarella Shreds: Most people do not like the Daiya shreds, but these were so good. The link goes to their parmesan, which I want to try next month, but the mozzarella should be local to you. They have a vegan and vegetarian option – I accidentally bought the vegetarian one the first time (it has casein in it).
  • Mug Brownie: I know this is not a healthy recipe, but for those of you trying to move into a plant-based diet, I wanted you to see that you can still have everything you were eating before. I have found so many surprising vegan options and I really don’t miss anything I was eating before a month ago.
