Mouth-Watering Mexican 3 Easy Ways

Mexican food is a family favourite in our house so when I received some of the new Old El Paso Stand ‘N’ Stuff tortillas I couldn’t wait to try them out. Not only are they great for kids (everything doesn’t fall out when you’re eating them) but they taste great too. Here are my top three, super-easy Mexican recipes for you to enjoy.

TRADITIONAL TACOS

It’s hard to beat traditional tacos using mince and the packet of seasoning that comes with the tortillas. I usually top mine with red pepper, sliced tomato, grated carrot, avocado, fresh herbs, and cheese. They’re easy to whip-up and great for finishing off any salad and veggies you have on hand.

SLOW-COOKED PULLED PORK & SLAW

This is another family favourite and once again it’s really quick and easy to prepare – perfect for those mid-week meals on the go. I use store bought Slow-Cooked Pulled Pork and Coleslaw for these. All you need to do is heat the tortillas and the pulled pork in the microwave and then layer your ingredients into the tortilla shell. I top mine with the sesame dressing that comes inside the packet of slaw but you can use any dressing you choose.

CURRIED LAMB & CUCUMBER RAITA

For this recipe I heat store bought lamb curry and place it into the tortillas along with fresh baby spinach and sliced cucumber. I top with a simple cucumber raita and chilli flakes.

CUCUMBER RAITA

Telegraph cucumber

1/2 cup Greek Yoghurt

3 Tbs lemon juice

1/2 tsp sugar

pinch of salt

Grate as much cucumber as you like into the yoghurt, add the remaining ingredients and stir thoroughly.
