Pressure Cooker Eggless Ragi Banana Cake Recipe


This week, I have decided to make some healthy baking. Then I decided to make Ragi Banana Cake. When I think of Ragi the next ingredient that goes to my mind is jaggery. Ragi and jaggery goes very well. So, I decided to use jaggery instead of regular sugar. So, I decided to use ragi, wheat flour, and jaggery to make this cake more healthier. Also, I have used pressure cooker method to bake the cake instead of using oven. This would be not only a healthy cake but the taste is also so delicious as ragi with jageery gives a nice flavour to the dish. Also the final texture is awesome. The cake is so soft and spongy. Lets see how to bake this Eggless Ragi Banana Cake recipe using pressure cooker.

Pressure Cooker Eggless Ragi Banana Cake Recipe
Ingredients:
Ragi Flour 3/4 Cup*
Wheat Flour 1/4 Cup
Baking Soda 1 teaspoon
Cardamom Powder 1/2 teaspoon
Cooking Oil 1/4 Cup
Grated Jaggery 3/4 Cup
Water 1/4 cup
Curd / Yogurt 1/4 Cup
Ripe Banana 2
Chopped Walnuts 1/4 Cup
Salt** 2 Cup
* 1 Cup = 250ml ** salt is for adding to the cooker. If you have an aluminium cooker, you don't need salt. You can heat up empty cooker itself. For other models please use salt or sand.

Pressure Cooker Eggless Ragi Banana Cake Recipe


Method:
  1. Like oven, first we need to pre-heat the pressure cooker. For that we need to add 2 cups of fine salt or crystal salt to the cooker. Make sure the cooker is dry completely before adding salt. Keep a small bowl in the center of the cooker and keep the flame in medium and close the lid. We don't need to put the weight. Take a round or rectangular vessel and grease it with oil or butter and sprinkle some flour and keep it ready.

  • Lets prepare our cake batter. First heat a sauce pan with 1/4 cup of water. Add grated jaggery to the sauce pan and mix well. Allow the jaggery to boil and get dissolved nicely. Set this jaggery juice aside and allow it to cool off completely. Take a mixing bowl, add ragi flour, wheat flour, baking soda, cardamom powder and give it a good mix with a whisk

  • Take another mixing bowl, add oil, yogurt, crushed banana, and jaggery juice and whisk well so that all the wet ingredients are nicely mixed and incorporated. Add dry flours to the wet ingredients and stir them well with a whisk.

  • Then finally add chopped walnuts and mix well. Now, our cake batter is now ready. Pour the cake batter in the cake tin. Tap it once or twice just to make sure there are no air pores

  • Keep this inside the pressure cooker on top of the small bowl which we have already kept. Make sure the vessel is in center of the cooker and doesn't touch the bottom of the cooker. If the cake vessel touches the bottom of the cooker, the cake will get burnt. Close the lid and allow the cake to bake for 5 minutes in the medium flame. After 5 minutes, keep the flame low and cook the cake for 30-35 minutes. Check the cake in 25 minutes. Insert a tooth pick to check if it comes clean. Then switch off the flame.

  • Carefully remove the baked cake and keep it aside to cool for sometime. After the cake gets cooled for sometime, using a knife, loosen the edges. Then flip the vessel on a plate to remove the cake from the vessel and allow it to fully cool off. Finally make pie shaped or triangular pieces out of the cake.

  • The yummy and healthy Eggless Ragi Banana Cake is now ready to serve!!!
