3 ways to eat Matzoh for Breakfast

This is not a cooking post. This is merely a post to highlight and help those who have been munching on cold stiff matzoh for Passover for the past 3 days, and are looking for some ways to turn their Oi, Vey! into an Oh yay! for breakfast.

I mentioned in an earlier post that we are a mixed religion household working on what each of these religions mean to us. I love a good tradition, and I also love a challenge, so I barreled head first into attempting being kosher for passover for 8 days. I thought it would make me lose weight. False. After 3 days of being unsatisfied with baked eggs and matzoh dipped in hummus, I have ended up finishing every meal with a chocolate covered macaroon (yes the jewish coconut kind, not macaron – although maybe I should switch to those because they are totally kosher for passover). There had to be another way!

Breakfast is the most important meal of the day so I decided that was where I needed to focus. No oatmeal, no toast, no liquiteria acai bowls, just matzoh in all its glory. Which brings us to our first and my most favorite passover recipe…

1. Matzoh Chiliquiles!

No I don’t have a recipe for this, but it’s the easiest adaptation of my favorite Mexican dish that it’s almost impossible to mess up. I made these this morning by adding 2 eggs and 1 egg white, some salt and pepper, half a sheet of crumbled matzoh, and a large spoonful of spicy green salsa into a bowl and mixing it up. You cook it like scrambled eggs, so the Matzoh absorbs the egg and salsa, and gets to be a nice slightly chewy texture that VASTLY increases the yum factor of the eggs. I topped with cheese, more salsa and fresh cut tomato to complete the Mexican flava. Seriously this is so easy and delicious I feel like a genius for making it up.

2. Matzoh Granola!

Not super original but just as easy and perfect to take with you for an easy nosh when you are hiking or you are actually just sitting at your desk starving like me. I took this recipe from Martha Stewart and just adapted it to whatever I had on hand. I had dried cranberries and a nut medley that I chopped up and baked with honey and brown sugar for 30 minutes. Super easy and extremely healthy, and because of the large chunks I actually prefer it to regular granola.

3. Avocado Toast Matzoh!

Ok this is not original but literally anything that tastes good on toast, does in fact also taste good on Matzoh! Yesterday I did two versions for myself and Mr. R – one with almond butter, banana and cinnamon and one with avocado mashed with lime juice and red pepper flakes, topped with a fried egg and a tomato. Both were healthy, delicious and filling, and I got to prove that I was a real baleboste. (look it up).
