Directions:
Preheat your oven to 350˚F. Grease a pie pan. Using an electric mixer (or some elbow grease) mix together the margarine and coconut sugar. Add the egg replacer and vanilla. Stir in the flour and graham cracker crumbs. Press ¾ of the mixture into the bottom of your prepared pie pan. Set aside.
In a double boiler, melt the chocolate. Using the whisk attachment of your hand mixer or electric mixer, whip together the silken tofu, melted chocolate, and vanilla until smooth. Pour the mixture into the pie crust. Cut the marshmallows in half and spread half over the chocolate pudding. Sprinkle the chocolate chunks over top. Top with the rest of the marshmallows. Spread the remaining crust dough over top. Bake for 20 minutes. Let the pie cool completely before cutting into it.

Have a great weekend! I'm going to take full advantage of the "warm" weather here in Edmonton and try to get outside as much as possible. I've loaded a few of my cameras up with some film so I hope to take lots of photos!
