Celebrating National Pi Day with Vegan S'more Pie!

Happy Pi Day everyone! I really love any excuse to make and eat pie. I've been thinking about making a S'more Pie for quite a while now and finally got around to making one last night. This is such a decadent and delicious pie that has me dreaming of summer and campfires. I found all of my ingredients at a local organic market. I can't believe how delicious the vegan marshmallows are! I would even say that they're better than regular marshmallows. It's best to cut into this pie at room temperature but that doesn't mean you can't heat it up a bit by the slice in the microwave. So gooey and delicious!

Prep Time: 10 minutes Cook Time: 20 Minutes

Ingredients

Crust:

  • ½ cup vegan margarine, room temperature
  • ½ cup coconut sugar
  • 1 ½ teaspoon egg replacer mixed with 1 tablespoon water
  • 1 teaspoon vanilla
  • 1 cup all purpose flour
  • 1 cup graham cracker crumbs

Chocolate Pudding:

  • ½ package silken tofu
  • 1 bar dark chocolate, melted
  • 1 teaspoon vanilla

Filling:

  • 1 ½ bags of vegan marshmallows
  • 1 cup vegan chocolate chunks

Directions:

Preheat your oven to 350˚F. Grease a pie pan. Using an electric mixer (or some elbow grease) mix together the margarine and coconut sugar. Add the egg replacer and vanilla. Stir in the flour and graham cracker crumbs. Press ¾ of the mixture into the bottom of your prepared pie pan. Set aside.

In a double boiler, melt the chocolate. Using the whisk attachment of your hand mixer or electric mixer, whip together the silken tofu, melted chocolate, and vanilla until smooth. Pour the mixture into the pie crust. Cut the marshmallows in half and spread half over the chocolate pudding. Sprinkle the chocolate chunks over top. Top with the rest of the marshmallows. Spread the remaining crust dough over top. Bake for 20 minutes. Let the pie cool completely before cutting into it.
