Recipe Rave Review: Lemon Polenta Cake



Mmmmmm, lemon....anything and everything lemon. When my Thriving Mommy wanted to whip up this tart treat, I was thrilled to be by her side to assist and taste anything I could get my lemon loving hands on. We grabbed what we needed, checked our Food Network recipe and got started.

Ingredients:
  • 1 3/4 sticks of soft, unsalted butter
  • 1 cup superfine sugar
  • 2 cups almond meal/flour
  • 3/4 cup fine polenta/corn meal (make sure it is SUPER FINE)
  • 1 1/2 teaspoons baking powder
  • 3 eggs
  • Zest two lemons (save the juice for later)
For the syrup:
  • The juice of the two lemons you zest
  • 1 (heaping cup) of confectioners sugar
**Need a springform pan**


First up, preheat your oven to 350 and line your fancy-pan (your mom probably has one, mine did as I had no clue what this was at first...) and with parchment paper.


Take your butter and sugar and "beat it" to the tune of Michael Jackson's jam...just kidding.


After it is good and "beaten", take your dry goods (almond meal, polenta, baking powder), mix it up then add a bit to the butter/sugar mixture, then an egg...a bit more, then another egg...a tad more, then that last egg. All the while beating it all together.





Once totally mixed, add that zest and give it one last beat.


Now comes the time to take that meal-ey mixture from the bowl to the fancy-pan. Place in the oven for 40 minutes. Look for the edges to start pulling away from the pan and make sure when you test with a toothpick it comes out clean. Once done, place the entire cake, in pan on a cooling rack.

While the cake cools, get started on that sweet, sweet syrup.


Mix together the lemon juice and confectioners sugar in a small saucepan and bring it to a boil. Once the sugar has dissolved, you are done! Now, this is where you really have to work to not spoon it all into your mouth.

Go back to that fresh cooling cake and poke some holes in the top using a toothpick. Then pour that heavenly sauce allllllll over the top and let it seep deep into the inside of that textured deliciousness. Let the cake cool completely before removing it from its pan...then enjoy! I know we did...a few times!
