A native Australian with a passion for healthy living, today she is sharing with us a Spelt Anzac Biscuit recipe that is as easy as it is satisfying. Anzac biscuits have long been associated with the Australian and New Zealand Army Corps (ANZAC) established in World War I. It has been claimed the biscuits were sent by wives to soldiers abroad because the ingredients do not spoil easily and the biscuits kept well during naval transportation. Both Australia and New Zealand claim to have invented it – however, seeing as Nicole is on the right side of the ditch, we’ll go with the Aussies for the win!
