Spelt Anzac Biscuits

When we recently crossed paths with fellow foodie and web entrepreneur Nicole Joy, we knew it was meant to be. (Just to give you a hint, her two books are titled, Why It’s Perfectly Acceptable to Eat Dessert for Breakfast and Life’s Too Short for Diets. Yup, you got us.) A native Australian with a passion for healthy living, today she is sharing with us a Spelt Anzac Biscuit recipe that is as easy as it is satisfying. Looking for a sweet dessert without all that extra sugar? You’ve come to the just right place.

  1. Preheat the oven to 150 degrees C (300 F) and line a baking tray with non-stick baking paper.
  2. In a large bowl, mix together the spelt flour, coconut, sugar and salt in a large bowl.
  3. In a small saucepan, melt the coconut oil then add the Maple syrup, vanilla and bi-carb soda.
  4. Add the wet ingredients to the dry ingredients and stir well. Add the water before shaping into balls and flattening with a fork.
  5. Bake for about 25 minutes and allow to cool for 30 minutes. I like mine crunchy so I actually left them in the oven (turned off) for an extra 5-10 minutes. Err on the lower side of 25 minutes if you prefer chewy.

*Makes 12 biscuits.

Anzac biscuits have long been associated with the Australian and New Zealand Army Corps (ANZAC) established in World War I. It has been claimed the biscuits were sent by wives to soldiers abroad because the ingredients do not spoil easily and the biscuits kept well during naval transportation. Both Australia and New Zealand claim to have invented it – however, seeing as Nicole is on the right side of the ditch, we’ll go with the Aussies for the win!
