Sunday, Yum Day: Breakfast for Dinner – Breakfast Casserole

In college my cop-out for evening meals was breakfast. Poptarts, instant oatmeal, ready-made muffins, bagel with creamed cheese… all very carb-loaded and pre-packaged. Now that I am responsible for cooking for 2 kids, a hubs and a table scrap eatin’ Husky I had to step up my game. Here is an oldie goldie directly from my mother-in-law’s kitchen. Thanks Nana Jo!

Ingredients

1 pkg Crescent Rolls

8 eggs

1 to 1 1/2 cups cheese (your choice – we like cheddar and colby jack, and a lot of it)

1 pound ground sausage (can substitute diced ham but avoid smoked or cured varieties)

veggies (again, your choice)

Directions:

Lightly coat the bottom of a 9 x 11 glass pan with non-stick spray or grease the old-fashioned way (that’s right, butter). Unroll the crescent rolls but leave them all connected in one solid sheet of dough. Spread the dough on the bottom of the pan. Use a medium skillet to lightly saute the veggies you are using. My favorites are onions and peppers, but mushrooms, spinach and any other veggie that is omelet worthy would be awesome in this casserole. Set veggies to the side. Brown sausage in the same skillet. Drain grease well and mix the veggies and sausage together. Spread evenly over the crescent roll dough. Next, crack eggs into a large bowl and use a fork to beat them. Mix in the cheese. Pour egg mixture over the meat/veggie mix. Side note: the more veggies you add the more egg/cheese mixture you will need. Have extra eggs and cheese on hand just in case. Bake at 350 for 25-30 minutes. Casserole should be brown on top and bottom and slightly firm to the touch.

Add some fresh fruit as a side and you have a well round breakfast. Good bye Eggos!

– Kid friendly.

– Leftover veggies from other meals can be used. No waste!

– Freezes like a dream. Cover well with plastic wrap and then wrap in aluminum foil.
