If there is one continent’s food that is a fave it’s Asiaa. From Japanese to Chinese to Viatnamese to Thai I love them all. I’ve eaten Vietnamese in a restaurant before but I’ve never tried making it at home. Chicken Pho was a dish that I’d enjoyed in restaurants so I decided to whip one up at home. All the ingredients should be readily available from any of the major supermarkets.
And boy am I glad I did. This is the perfect winter warmer recipe. Full of flavour, relatively healthy and easy to knock up in an hour.

Ingredients
- 1 tbsp Coconut Oil
- 1tsp black pepper
- 1 1/2 lemongrass stalks, sliced
- 1/2 cinnamon stick
- star anise
- 3cm piece fresh root ginger, sliced
- 600ml chicken stock
- 2 chicken breasts, thinly sliced
- 1tbsp Thai fish sauce
- juice of 1 lime
- a packet of fresh rice noodles (the skinny ones)
- Stir fry vegetables
- 3 spring onions, trimmed and thinly sliced
- 1 red chilli, halved, deseeded and chopped
- large handful fresh coriander
Instructions
- Heat the coconut oil in a largeish saucepan.
- Add the lemongrass, cinnamon stick, star anise and cook on a moderate heat. We are aiming for the spices to infuse with the oil.
- Add the stock, half a litre of water and the raw chicken breast.
- Bring to the boil and simmer on a low heat for 35 minutes.
- Remove the chicken from the pan.
- Strain the stock and return to the pan add the chicken breast.
- Once chicken is completely cooked add the fish sauce, lime juice, rice noodles and stir fry vegetables and leave to simmer for five mins.
- Add the sliced spring onions and place in a bowl.
- Sprinkle the chilli and coriander on top and
- SERVE.
