Super Bowl SnackDown: Reese’s Muddy Buddies (Gluten Free)

When I was in high school (back in The Dark Ages), the highlight of every bake sale was definitely the Muddy Buddies. For those not familiar with this classic American snack, “Muddy Buddies” are essentially Chex cereal mixed with salty/sweet goodness. It’s inexpensive and quick to make — perfect for any party. You can also individually package the mix and hand it out for any occasion, like Valentine’s Day!

Reese’s Muddy Buddies (Gluten Free)

Ingredients

  • 9 cups Gluten Free Rice Chex
  • 1 cup Semisweet chocolate chips (I use Ghirardelli)
  • 1/2 cup Reese’s Peanut Butter Chocolate Spread
  • 1/4 cup Unsalted butter
  • 1 teaspoon Vanilla
  • pinch Salt
  • Powdered Sugar

Directions


Step 1
Measure 9 cups of Gluten Free Chex and place into a large mixing bowl. Set aside.
Step 2
Place semisweet chocolate chips, butter, and peanut butter into a microwaveable container and heat until smooth (approximately 1-2 minutes). I take the container out every 30-seconds or so and stir. You do not want to over overcook or burn the chocolate!
Step 3
Stir in vanilla and salt (according to taste). Adding salt is not a traditional step, but I love salty/sweet combinations. By using unsalted butter, you can control the amount of salt you want.
Step 4
Pour chocolate mixture over the Chex and fold with a spatula. Do not panic if every piece isn’t evenly covered. If you get clumps of chocolate and Chex, gently break them apart and continue to fold.
Step 5
I use 2 gallon-size freezer bags and place my desired about of powdered sugar in each. (I don’t measure it out, but I’d say about 3/4 cup in each bag.) Divide the Chex mixture into both bags and shake.

You’ll want to store the Muddy Buddies in an airtight container in the fridge. I personally like to make these a day before I am going to serve them. For some reason I think they taste better once the chocolate has had time to cool and settle into the Chex.
