What Olivia Cooked: Pancake Pops



Being a blogger, if there's one thing that isn't macaroons that go down a treat with the twenty-something style loving lady (or y'know just a chick that has a bit of a sweet tooth)- it's a cake pop. On top of that, with pancake day being something that probably occurs about once a week in my calendar (I can't help it) I thought I'd pop up something a little different to the classic crepe, but equally as yummy- and probably a little bit less naughty. The pancake recipe is based on a fluffy American pancake by Jamie Oliver with the pop idea coming from Pinterest, and my love for all things a little bit cute (come on, a pancake, on a stick guys)! The best part is that you can pop anything inside of them- blueberries just adding a little to the guilt-free factor, although I'm sure chocolate chips and marshmallows would be amazing!

You will need:
- A frying pan (heated a little)
- A whisk/electric whisk
- 3 eggs
- 115g plain flour
- 1 teaspoon baking powder
- 140ml milk
- A pinch of salt

1. Separate the eggs, and put the egg whites and yolks into two separate bowls. Add the flour, baking powder and milk and mix to make a thick batter.

2. Whisk the whites and pinch of salt until it forms stiff peaks, like a meringue mix (if you're doing this by hand it could take a while- perseverance is key)!

3. Fold the whites into the yolk batter gently, this is what makes is all very fluffy!

4. Using a teaspoon, create small circle shaped pancakes in your heated pan and leave to brown for a couple of minutes (if that- keep checking at this stage)! You don't want them to be undercooked, but equally not burnt.

5. Whilst the bottom side is cooking sprinkle your filling/blueberries on the top side, before flipping them over, and leaving for another couple of minutes!

6. Leave to cool for a few seconds and pop the sticks through the centre (these are definitely best warm) and lather with golden syrup, honey or lemon and sugar! Enjoy!
